EASTER IDEAS
Bunny Cake
How cute is this? I couldn't find step by step directions but the picture really does speak a thousand words here!
Let me know if you try this!! If you do let me know how easy or hard it was and what you did differently! Don't forget the pictures!!
BUNNY ROLLS
So, at first I thought these were bread rolls. Then a friend found this recipe. I'm not a huge fan of coconut so she suggested a custard filling instead.
Makes 24
Filling:
Combine:
1 c. sugar
1/2 c. milk
1 tsp. vanilla
1/8 tsp. salt
1 1/2 c. flaked coconut
2 tbsp. butter
~Refrigerate, then roll into balls.
Dough:
2 1/2 cups flour
1/2 cup warm milk
1/3 cup warm water
4 tablespoons sugar
1/4 oz active dry yeast
1/2 teaspoon salt
In a small bowl, dissolve 2 tablespoons of the sugar in the milk and water. Sprinkle in the yeast and allow to sit 10 minutes. Mix in the remaining sugar, 2 cups of flour and the salt. Mix until the dough is no longer sticky, adding additional flour as needed. Place dough on a floured service and knead until smooth, about 8 minutes. Place in a greased bowl, cover and allow to rise until doubled in bulk, about 1 hour.
Punch the dough down, roll it into a cylinder. Cut it into 12 equal pieces. Pinch two small balls off each of the 12 pieces for ears, and roll the larger twelve pieces into balls.
Roll each of the larger balls into a circle about 4-6 inches in diameter. Place 1 tablespoon (or slightly more) of filling into the center of the circle. Pull the edges of the circle up over the filling, pinch in the center to seal. Place the buns seam side down on a sheet of parchment paper-lined cookie sheet and repeat for each circle, leave a 2 inch space between each bun.
Pinch the pairs of small balls into bunny ears and attach–you may have to moisten the ears to make them stick. I used knitting needles to poke a pair of eyes into each of the eared bunnies.
Cover and let rise until puffy and light. Brush with a light sesame oil or a light egg wash.
Bake in a preheated 350-degree oven for 15 minutes.
Serve immediately–you can sprinkle them with powdered sugar and or fine coconut flakes, but I think they’re too cute to cover up :)
CHOCOLATE CHIP COOKIE BASKETS
How cute are these? And tasty looking!
These would work good to use for sitting arrangements.
1 package (16.5 oz.) NESTLÉ® TOLL HOUSE® Refrigerated Chocolate Chip Cookie Bar Dough
1 cup prepared white frosting
Green food coloring
1/4 cup sweetened flaked coconut
WONKA® SweeTARTS® or SPREE® Jelly Beans
Thin-string licorice, various colors, cut into 3-inch pieces for basket handles (optional)
Directions:
PREHEAT oven to 350° F. Grease and flour 24 mini-muffin cups. Place one square of cookie dough into each cup.
BAKE for 14 to 17 minutes or until golden brown. Remove pans to wire rack. If licorice handles are to be added, with tip of wooden pick, make two holes opposite each other on top edge of cup. Make sure holes are the same size as the width of the licorice. This is best done when cups are very warm. Cool cups completely in pans on wire rack. With tip of butter knife, remove cookie cups from muffin pans. Arrange on serving platter.
COMBINE frosting and a few drops of food coloring in small bowl, adding additional food coloring until desired shade is reached.
DISSOLVE a few drops of food coloring in 1/4 teaspoon water in small, resealable food storage plastic bag. Add coconut. Seal bag and shake to evenly coat coconut.
SPOON a small amount of frosting onto the top of each cup. Add a pinch of tinted coconut. Top grass with SweeTarts Jelly Beans. Insert ends of licorice into small holes in cups for handles.
EASTER DEVILED EGGS
So there are a few different deviled egg ideas for Easter, but this one ... Well ... How cool is this???
Ingredients
10 hard boiled eggs
food coloring
1 tsp vinegar for each color you are using
water
½ cup mayonnaise or Miracle Whip or half of each (I use Miracle Whip)
Instructions
Remove the shells from the hard boiled eggs and slice each egg in half.
Remove the yolks from the egg halves and place in a bowl. Set the yolks aside.
Get enough glasses or mugs for the number of colors you want to use. Fill the mugs or glasses 1/2 of the way full with cold water.
Add 3 drops of desired food coloring along with 1 tsp vinegar to each mug or cup.
Place egg whites in the mugs and allow to sit in the food coloring until desired color is reached. I could fit 3 egg whites in each of my mugs at a time.
Remove whites from dye and drain on a plate lined with a couple of paper towels.
Take the reserved yolks and mash them with a fork. Then mix in the ½ cup mayonnaise with the mashed yolk.
Pipe or spoon the yolk mix into the colored egg whites. Makes 20 deviled egg halves.

Step Two:
Wash your eggs in warm soapy water!
Step Three:
After your eggs have dried, spray the insides of both half's with non-stick cooking spray...generously enough that the jello won't stick, but not so generously that you will be tasting the cooking spray when your jello eggs are done...
Step Four:
Put your eggs together and place them in your empty egg cartons...

Step Six:
Pour that water into a bowl and dissolve your first color/flavor of jello in the boiling water
Step Seven:
Place 1/3 Cup of whipped topping into your other bowl...
Step Eight:
Pour half of your dissolved jello over the whipped topping and whisk until the whipped topping is dissolved...
Step Nine:
Set your "clear" bowl of dissolved jello aside...then take your whipped topping dissolved jello and measure out 10 ML (2 Medicine Syringe's full) of the jello mixture and squirt it into the hole on top of your plastic Easter egg. Repeat this process until you have put 10 ML of your jello mixture inside each of your 12 eggs.

Step Ten:
Place eggs inside fridge for 30-45 minutes until jello has set up. Don't worry, they start setting up faster with each layer.
Step Eleven:
Remove your eggs from the fridge and add your clear layer of dissolved jello, let it set, then repeat steps 1-11 all over again until your eggs are full. Make sure to wash the dishes you used with HOT water after every layer...this will keep you from having to use 12 bowls, 12 spoons, 12 wisks, and 12 syringes :)

Step Twelve:
Very VERY Carefully remove your rainbow eggs from their molds...here is a tip for you, remove the bottom half of the egg first (the fatter shorter end) and they are more likely to come out in one piece, especially if you sprayed enough non-stick cooking spray on them...and Voila! Rainbow Jello Easter Eggs! I hope you enjoy! These are so yummy!
