SALAD IN A JAR
WHAT YOU NEED:
Mason Jars
Whatever salad fixings you like

I used large
mason jars. Made a hole in the top with a push pin. Cover hole loosely with electric tape. Then used a ziploc sealer to vacuum pack the salad. It causes a seal. You know when its sealed because the center of jar lid is down and when you open it makes a pop noise.I also found the croutons got soggy. I am the only one who eats salad in my house. next time I will just put my lettuce and spinach in the Jars. That way they last from 1&1/2 weeks to 2 weeks and i will just add my other ingredients when i eat it.
Thanks to Leslie H. for this easy and quick meal. I think this may be the new "it" thing!
TABOULI
Tabouli is also known as a cracked wheat salad.
WHAT YOU NEED:
1 box tabouli mix (cracked wheat)
1-2 Large tomatos (depending on your preference)
1 bushel of Green Onion tops
1 bushel parsley
3 lemons
Extra Virgin Olive Oil
Seasoning
DIRECTIONS:
Soak the cracked wheat in a bowl in cool water.
While your cracked wheat is soaking cut all veggies into small pieces.
By now your cracked wheat should be ready to drain. By the handful squeeze the water from the cracked wheat and add to the veggies. Mix. If you find you want more of the veggies add more.
Add olive oil. It should coat everything. Again, the amount you use is to your discretion. This applies for every ingredient in this recipe.
Cut the lemons in half and juice them. Add half to start. Add seasoning and taste. If you need more lemon or seasoning add. I like a lot of lemon, I normally use 3-5 lemons.
In a typical Greek or Lebanese restaurant it is more of a parsley salad. I prefer mine as a cracked wheat salad. Again, use your own preferences in how much of what you add.
Don't forget, if you try it let me know how it turned out. Send in pictures
of your tweaked recipe!
